1. Sourcing A2 Milk
- Only pure A2 milk from Gir cows is used. These cows are well-fed with natural fodder and allowed to graze freely.
- No artificial hormones or commercial dairy practices—ensuring authentic, nutrient-rich milk.
2. Curd Preparation
- The fresh milk is boiled and then naturally fermented to form curd (yogurt).
- No shortcuts—chemical curdling agents are strictly avoided.
3. Churning (Bilona Process)
- The curd is churned using the Bilona method, which involves two-way churning (clockwise and anti-clockwise) using a churner.
- This slow churning helps separate butter (makhan) from the buttermilk.
4. Heating the Butter to Extract Ghee
- The separated butter is then slowly heated on a low flame to extract golden A2 Gir Cow Ghee.
- This process ensures that beneficial nutrients like Omega-3 fatty acids & butyric acid remain intact.
- As the butter melts, impurities settle, leaving behind clarified ghee with a rich aroma.
5. Straining & Packaging
- The ghee is filtered to remove any residue and then stored in glass containers to preserve freshness.
- No artificial preservatives or additives—pure, handmade ghee ready for consumption!
Benefits of Bilona Method?
- Retains essential fatty acids, vitamins (A, D, E, K), and bioactive compounds.
- Superior in taste, aroma, and nutritional value compared to factory-made ghee.
- Promotes better digestion, energy, and immunity according to Ayurveda.
This time-tested process is what makes Tailyam Bilona A2 Gir Cow Ghee one of the most premium and authentic dairy products available.
Difference between Bilona Ghee and Regular Cream Ghee
Bilona A2 Gir Cow Ghee is the purest, most nutritious form of ghee available—made with love, patience, and tradition. Regular cream ghee may be convenient, but it doesn’t match the depth of taste, health benefits, and Ayurvedic properties of Bilona Ghee
Here’s how Bilona A2 Gir Cow Ghee stands apart from Regular Cream Ghee:
1. Raw Material Used
- Bilona Ghee: Made from cultured curd, ensuring the natural fermentation process enhances nutrients.
- Cream Ghee: Made from directly churned malai (cream) extracted from milk, skipping the curd formation step.
2. Churning Process
- Bilona Ghee: Uses the traditional Bilona method, a slow hand-churning process that preserves natural enzymes.
- Cream Ghee: Industrial machines mechanically separate butter, making it faster but reducing nutritional integrity.
3. Heating Process
- Bilona Ghee: Butter is slow-cooked over a low flame, ensuring optimal retention of butyric acid, vitamins, and minerals.
- Cream Ghee: Usually mass-produced at high temperatures, often reducing nutritional value.
4. Nutritional Benefits
- Bilona Ghee: Richer in antioxidants, Omega-3, and butyric acid—supports gut health and boosts immunity.
- Cream Ghee: Less nutrient-dense and often lacks the health benefits linked to traditional ghee-making.
5. Taste & Aroma
- Bilona Ghee: Has an earthy, rich aroma with a deeper golden hue and grainy texture.
- Cream Ghee: Usually has a neutral aroma with a smoother texture but lacks traditional depth in taste.
6. Ayurvedic Value
- Bilona Ghee: Considered medicinal in Ayurveda, used for detoxification, digestion, and cognitive health.
- Cream Ghee: Often lacks the therapeutic qualities of Bilona Ghee.
7. Shelf Life & Purity
- Bilona Ghee: Naturally preserved for years when stored in airtight containers. No additives or preservatives.
- Cream Ghee: Shorter shelf life, often containing stabilizers for extended storage.
Bilona Ghee: Little Price for High Quality
The premium price of Bilona A2 Gir Cow Ghee is a direct result of the meticulous process, superior quality, and exceptional health benefits it offers. Every drop is crafted with care, following time-honoured traditions that make it truly special.
Why is Bilona Ghee More Expensive?
- Traditional Hand-Churning Unlike mass-produced ghee, Bilona Ghee is made using the ancient Bilona method, where curd is manually churned to extract butter. This slow and labour-intensive process requires skilled craftsmanship, preserving nutrients and enhancing taste.
- Low Yield & High Milk Requirement to produce just 1 liter of Bilona Ghee, nearly 25–30 liters of A2 milk are needed. This makes it rarer and more valuable compared to regular ghee, which is made by directly heating cream.
- Ethical & Sustainable Dairy Practices Our Gir cows are free-grazing, fed on organic fodder, and treated with utmost care. Unlike commercial dairies that focus on volume, we prioritize natural, healthy milk production, which comes at a higher cost.
- Nutritional Richness Packed with essential fatty acids, Omega-3, butyric acid, and vitamins, Bilona Ghee is a nutritional powerhouse that enhances digestion, boosts immunity, and supports overall well-being. Factory-made ghee often lacks these health benefits.
- Pure, Additive-Free Composition No artificial preservatives, stabilizers, or additives—just pure, handmade ghee that retains its natural aroma and therapeutic properties.
- Ayurvedic & Medicinal Properties Ayurveda praises Bilona Ghee for its ability to detoxify the body, improve brain function, and support gut health. It’s more than just a cooking fat—it’s a holistic wellness ingredient.
- Small-Batch Production Since Bilona Ghee is crafted in limited batches, each jar receives special attention, maintaining its authenticity and rich flavour profile. Mass-produced ghee prioritizes efficiency over quality, often missing out on this depth.
Bilona ghee is a celebration of India’s timeless tradition, crafted using the age-old bilona method that dates back to the time of Shri Krishna. This traditional process involves churning curd made from native cow’s milk to extract butter, which is then slowly simmered to produce ghee. Unlike modern shortcuts, this meticulous method preserves the essential nutrients and imparts a rich, aromatic flavour. Renowned for its health benefits, bilona ghee is a powerhouse of antioxidants, aids digestion, strengthens immunity, and enhances overall vitality. At Tailyam, we honour this legacy, bringing you ghee that embodies purity, authenticity, and the spirit of ancient wisdom.
