Ingredients (Serves 2-4)

  • 1½ cups boiled chickpeas (or canned, drained)
  • 1 ripe avocado
  • 1 tsp salt
  • 1 tbsp finely chopped green chilies (adjust to taste)
  • 2 tbsp finely chopped cilantro
  • 2 tbsp fresh lime juice
  • 4 slices French bread (or your choice of bread)
  • 1 tbsp balsamic glaze (or balsamic vinegar)
  • 2 tbsp shredded radish (optional, for crunch and color)

Instructions

1. Mash the Chickpeas

  • Using a fork or potato masher, mash the chickpeas roughly. Some whole chickpeas are fine for added texture.

2. Add Seasonings

  • Mix in salt, chopped green chilies, cilantro, and lime juice. Stir well and adjust seasoning to taste.

3. Prepare the Avocado

  • Cut the avocado in half, remove the pit, and scoop out the flesh.
  • Mash it into the chickpea mixture until well combined. (Add it right before serving to maintain its fresh green color.)

4. Assemble the Toast

  • Toast your French bread slices until golden brown.
  • Generously spread the avocado-chickpea mix over each slice.

5. Garnish & Serve

  • Drizzle balsamic glaze for extra depth of flavor.
  • Top with shredded radish for crunch and a pop of color.
